Ok - St. Patrick's Day is officially over when we celebrate it with our dear friends, Mike & Ada. Every December, they treat us to a traditional Norwegian Christmas dinner to kick off the Christmas season and every March, we treat them to an authentic Irish meal. We celebrated on Saturday night and could barely waddle from their house, we were so stuffed.
This years menu....
Fish & chips (new recipe this year. You bread cod & potatoes and then deep fry them) YUM
Dublin Coddle (same old, same old - but a favorite! Made with Apple Cider - not hard)
Colcannon (mashed potatoes with cabbage and onions mixed in.)

Dingle Pies (after 3 years of attempting, we finally hit on a great crust for these. We used Pepperidge Farms pastry shells. Worked beautifully!)
Leeks with bacon, cheese and cream. (2nd year and was still a hit!)
DDP(diet doctor pepper) and milk for drinks. That's traditional, isn't it?
For dessert, Ada and Mike made cupcakes with pistachio pudding and chocolate chips mixed in. Delicious! and very festive!
I will post some recipes for these soon.
These photos are a few years old... but the only ones I could find that showed my kids eating anything authentically Irish. Paninis in Kilkee, County Clare to the left and quick made sandwiches outside of Mitchellstown Caves.
