Irish Oatmeal Risotto
This is one my favorite comfort foods. Oatmeal with some flavor! Every year around this time, my husband, myself and the kids have a traditional Irish meal with some dear friends of ours to celebrate St. Patrick's Day. Robb's Scots/Irish, I'm German/Norwegian, they're way Norwegian. We came across this recipe in a Guinness mini cookbook that I don't even know where we got it...
We loved it! And I made it for Christmas dinner once with some dried cranberries thrown in. DELISH! If you like cranberries...

You can find the steel-cut oats in the healthfood area of your grocery. At Cubs, it's in the healthfood area near the produce.
I do sometimes use regular onions instead of shallots, but I found that shallots have a more subtle taste that I really like. And I've never used saffron.
This is making me hungry! If I had a longer lunch, maybe I'd do this... But I've got to keep working on getting my kitchen and diningroom back in order...
