It's not fancy...
Trust me, the soup is nothing special... but Maddy loves it. She's
a salt-a-holic as I am...
Boil noodles as directed. any kind will do. I happened to have orzo
handy today, but egg noodles are perfect with this.
In separate pan, fry up a chicken breast, then chop it up.
Add the chicken to 2 or 3 cans of chicken broth along with any
leftover peas you might have in the fridge. Peel a carrot and then
keep peeling pieces of it directly into the broth for some color.
Add a little chicken bullion for more flavor. Bring to a boil and keep
it there.
When the noodles and carrot slivers are soft, drain and add noodles
to the broth mixture.
Serve.
I usually try to have one of those dried veggie soup packets handy
and just add that to the broth and chicken, but sometimes I don't
have it on hand and have to punt with the leftover stuff and fresh
carrots.
Like I said... nothing special, but if she likes it, then I'm happy!
