Mocha Truffle Heaven! *recipe*

One of my favorite treats to make at Christmas time are Mocha Truffles!  I've got the mixture cooling in the fridge until tomorrows goodie making fest out at Ada's.  Her husband loves these too.  I will probably make another type with white chocolate chips or without the coffee flavoring.

Anyway, here you go!  The original recipe came from Hershey's Candy cookbook ions ago.  I magnetize the recipe to my oven fan and away we go!


There are some tweaks I've made...

Mocha Truffles
Makes about 16 truffles or 10 if you taste test.

1/4 cups heavy whipping cream
3 tablespoons sugar
3 tablespoons butter
1 1/2 teaspoons powdered instant coffee
1/2 cup Milk Chocolate chips
1/2 teaspoon vanilla extract

1. Combine whipping cream, sugar, butter and instant coffee in small saucepan.  


Cook over low heat, stirring constantly, just until mixture boils.  


This means bubbles over the whole surface.  

Otherwise you end up with chocolate goop, which is still really good with a spoon...


2. Remove from heat; immediately add chocolate chips.  Stir until chips are melted and mixture is smooth when stirred.  add vanlia.  Pour into small bowl; Cover and refridgerate several hours or overnight to allow mixture to ripen and harden.  You're supposed to stir it occasionally until it begins to set, but I'll never remember.

3. Shape small amounts of the mixture into 1-inch balls, working quickly to prevent melting.  I use the smallest cookie scoop I have.  Roll in nuts or chocolate.  I typically melt some either chocolate bark or almond bark and roll it in that quickly.  Setting them out on some wax paper to dry.  As soon as you're done with forming and dipping them, cover and store them in the refrigerator.  Serve cold.

MMMMMMMmmm!!!  I've already snitched a little spoonful and can't wait until I can try a completed one!

Yummy! I am not a coffee drinker, but I LOVE coffee flavored candy!

That reminds me that I have a super easy truffle recipe at home. All it takes is chocolate chips, a can of chocolate frosting and Kahlua. Oh, and stuff to dip/roll them in. Yummy!
