Robb LOVES these rolls that my aunt Janice used to bring to the Thanksgiving reunions. We get all the leftover rolls at the reunions because she knows it. :) YUM... Robb attempted to make them once but they didn't turn out. Some time soon, we'll have to try it again.
I don't have a photo of her rolls so I borrowed one from anoregoncottage.
They look just like they came from Janice's recipe, below....
My Aunt Janice's Rolls
1.5 cups Water
1 cup creamed cottage cheese
1.5 cup honey
1/4 cup butter
5.5-6 cups flour
1 cup whole wheat flour
2 Tbls sugar
3 tsp salt
2 packages yeast
1 egg
Heat first 4 ingredients until 120-130 F.
In a large bowl mix liquid with 2 cups flour and 1 cup whole wheat flour.
Add sugar, salt, yeast and egg.
Mix at low speed until moistened. Two minutes at medium speed.
By hand, stir in remaining flour until a stiff dough. Knead about 2 minutes.
Grease bowl - let rise until double. About an hour.
Butter hands and make into rolls. Put in the greased pan.
Bake at 350 degrees. 40-50 minutes for bread, 12-15 for buns
Tap them. If they sound hollow then done. Go over all with butter so they stay soft.
