Friday was Meri's for REALs birthday. and she was going to be gone ALL day until late. Darn school and work activities...
I wanted to try out a new recipe I'd found, so on Friday night I made it. It's pizza made with a cauliflower crust.
I had a bunch of cauliflower that I was afraid might be going bad soon, so I threw it all in the oven with a foil lid for an hour. Mashed it up and added a few things.
1/4 cup grated Parmesan
1/2 cup grated Mozzerella that I made the other day, but just use the stuff from the store...
1/2 teaspoon Italian seasoning. I couldn't find any, so I used oregano.
1/4 teaspoon salt.
1 large egg
mix all together and then spread out on parchment paper to look like a pizza, bake at 400 degrees.
Top with whatever you want.
I made a TEENY piece with hamburger for Robb so he could try it.
He had his own pizza with a pizza dough crust. Well, with a corner of it for Meri if she didn't like the cauliflower.
The rest of the pepperoni/cauliflower pizza was for Meri and me.
She got one slice and I ate up the rest... It wasn't very big. REALLY!
I might do the crust thinner next time.
Robb ran some food over to her at her job so she could get something to eat. It was a long day for her.
On Saturday, after a belated Christmas program practice with the Sunday school kids, Meri and I stopped at JoAnns and picked up fabric for her Sweetheart dress. Then I sewed sewed sewed all the rest of the live long day, taking a break for supper. Her dress is done except for a zipper and a hem.
I even got two more sample bodices made for Maddy on Saturday! I'm not sure about one thing, so we're scheduling a fitting for next week some time. Ok, two things.
On Sunday, I stopped by the 4H meeting where Meri showed up with friends who were helping her celebrate her birthday. They met for a total of 2 minutes, then the kids went ice skating.
There were the kids who were show offs in the middle of the rink.
Kids using walkers.
And then of course, the side clingers...
Meri isn't too bad and only fell once. One of her friends got up enough courage to actually let go of the sides but then clung to another friend for the rest of it.
Not sure if that counts.
Picked up a few things for the evening and headed home to prepare for a belated birthday dinner bash for Meri. Super Secret Steak night with ice cream cake for dessert since she's a huge cake hater.
Leon helped her blow out the candles.
Since she'd already opened all her presents at the fake birthday and on Friday, she was surprised to find that Jen had brought her one to open for this!
The Sparkling Cider makes her look like a boozer... BUT she's not. She just loves the stuff. Sparkling cider I mean!
And now the birthday-tide lasts until late February for her...
I wonder what she's invoke her Birthday-tide privileges on...?...

Love that someone else is not a big cake lover. I don't hate it but I am cake indifferent!
17??? That just can't be. I think she was 10 or 12 when I began reading here? That means Ethan was 8 or 10. He's getting his driver's permit next month.

OK. I just went back and looked at some random post from August 2009 and I had commented. I don't know when you started this blog, but it's been at least 7 years that I've been reading here!
I forgot to ask, what did you think of the cauliflower crust. I keep toying with the idea of making one, but have yet to pull the trigger
My daughter makes the cauliflower crust pizza. Besides vegetarian she's reducing her bread consumption as part of her new eating plan. I've never been around to try any before it's been gobbled up. It sounds like Meri had a terrific birthday.
