Turkey Bone Broth & crisis

 Bone broth in my house has had it's ups and downs.  

Derecho killed several bags of broth that I had in my freezer...  What a waste!

It used to get too greasy and some (I won't name names) didn't care for it.

It used to get too watery and I didn't much care for it.  But if I was cooking rice with it, so what?!

But I think I've finally mastered it, at least for making it out of a turkey carcass.

Take the turkey carcass and break it up small enough to just fit into the Instant Pot. (from heretofore will be called IP) (don't you love my lawyer-speak?)(I've missed my calling)

Peel JUST the outer most layer of an onion, rinse and cut up into big chunks. 
Not many chunks... throw in.

Wash about 4-5 carrots and cut off the ends.  Chunk them up into big chunks too.  throw in.

Add about 1-2 tablespoons of minced garlic

Add about 1 tablespoon of salt (I WOULD have used sea salt, but couldn't find my stash of it.)

Add about 1 tablespoon of apple cider vinegar

Add 3-4 bay leaves

Add enough water to fill the pot within a couple inches of the top.

Set the IP to 180 minutes (3 hours to you and me), High pressure, move the little gauge to seal. 
Let it go.

When the 3 hours of cooking is up, just let it sit for another couple hours until you have time to open it up.  Then line a colander with a flour towel (or cheesecloth), positioning it over another container to catch the liquid gold.

Stick it in the fridge overnight.

Next day...  Skim off any grease that may have formed and package it up in marked (with date and what it is) baggies.  About 2 cups per bag.  Freeze.


Easy peasy huh!?

The only issue I had with this batch was that I wanted to try it last night when I took the lid off the IP.  It had been filling the house with delicious smells all afternoon and I was dying to try it.

I was talking out loud to Robb as I tried sipping it in a little ladle over the sink.

"mmmm" I said, taking a bigger sip, "this is wonderful! " Suddenly letting it all fall out of my mouth, into the sink and I spat it out.

Robb replied, "how wonderful can it be if you're spitting it out?"
I guess he supposed it's like a wine tasting...

I had gotten too much in my mouth and burned myself...  So today, I'm exhibiting signs of Covid by not having any sense of taste.  But it's just the broth burns. The taste buds will grow back.

Don't try this at home folks!  Or at least let it cool a bit before chugging it.

Broth/soup that is too hot can cause the nastiest burns. I hope it heals fast.

The peril of broth making is the tasting! I can't tell you how many times I have burned my tongue trying to sneak a bit of deliciousness.`

Mostly, my broth is worthless.
