Dublin Coddle recipe

I also mentioned Dublin Coddle the other day and got a lot of requests about that as well as the Bacon Explosion. As you know, I love everything Irish. We've been to Ireland twice and feel pretty nostalgic every once in a while.

Around every St. Patrick's Day, we celebrate by taking a meal out to my best friend's house, as she's a shut in and can't get out much. Every winter, they make us a Norwegian Christmas dinner, so we make them an Irish meal in March for St. Patrick's day.

We've experimented with several Irish recipes over the years and really grew to love this one.

Dublin Coddle

2 lbs seasoned pork sausage
2 large diced onions
1 lb lean bacon
2 cloves garlic, sliced
4 large potatoes, peeled and sliced
2 carrots, sliced
salt and pepper to taste
Apple Cider (about 1 quart)

Directions
  1. Heat some oil in a pan, add onions and garlic and fry until soft.
  2. Put sausages, bacon, potatoes, and carrots in the pan with the onions and garlic.
  3. Cover with cider and cook over moderate heat for 1 hour.

If you like hard cider, they cook it with that too. But we're feeding our kids here!

This really sounds yummy to me. I also have some cider I need to use up. No one is drinking it! Bacon, sausage, potatoes... you can't go wrong with that! Thank you for the recipe... beautiful picture also. Would love to visit Ireland... do you know how lucky you are?! -Tammy

I love these potatoey, slow cooked Irish dishes. So very appropriate for us here in Dublin. (Dublin, Ohio, that is!) ;^)
