On a Friday or Saturday night, I make either homemade pizza or personal type calzones. I've purchased an economy sized package of Pepperoni from Sam's Club and keep it in the freezer for such occasions. However 4 of the 6 people that live in our house hate Pepperoni... So I also have other toppings.
For these calzones here is what I did...
Put pizza dough ingredients into the bread machine and let it knead and raise for about 45 minutes or until you can't stand the wait any longer...
Preheat oven to 425 degrees.
Pull out 3 pieces of waxed paper (because I hate rolling out dough on the counter. Too much clean up!) I lay out 2 pieces of the waxed paper overlapping, then put on flour liberally and spray and flour the third piece. Cut the dough into however many Calzones you want and put each piece on the floured paper individually. Put more flour on the top of the piece of dough.
Put on the top sheet of waxed paper and roll out the dough. This take a little practice. Keep flouring as needed to keep it from sticking to the waxed paper...
Once each piece gets rolled out to a good size, start topping on half of it with pizza sauce (or even just tomato sauce) and any other fillings you like. We've used cooked hamburger, of course Pepperoni, just cheese, spinach, green peppers, onions, anything you like. Top it with some cheese (except for the cheese calzone of course...) and fold over, pinching all ends shut.
Transfer to a greased baking sheet. Take one egg and whip it up good in a bowl. Then brush it onto the calzones. This gives it nice look when you pull it out of the oven. Don't over do it with the egg wash or your husband will ask why he's getting a huge omelette for supper...
If you like you can sprinkle a little more cheese on top for looks. That will impress the kids!
Bake them for about 10-15 minutes until the top is nicely golden brown on the edges and most of the top.

ps: great you tried the 'puff'recipe, next time, try pre-heating the muffin pan in the oven first. Sorry didn't mention it on the post-woops!

Yummy, this sounds and looks so good. These are my Grand-daughters favorite but I must confess I buy them from Pizza Hut. I might give them a try.

Out east here, saying personal sized calzone is redundant. If it's too big to hold in your hand and eat, it's a stromboli(and it's shapped a little differently). I worked in Brooklyn, the americanized Italian food capital of the country so I can say this.lol
The Italian neighborhood eatries in Brooklyn would slap you from here to Sicily if you ever put cheese on the top of a calzone..eek! How could you deep fry that thing?....some of them(those Brooklyn guys again) do fry them. But yours DOES look so yummy and totally eat-able!!
I made calzone-like food last week. I have tons of those whack biscuit rolls to use up so I subbed that for pizza dough. The fandamily loved them tho I couldn't get over the biscuit like texture and lightness of the dough wrapped around the calzone filling. Too weird for me. I am all about the pizza dough!lol
