Oven Denver Omelet Recipe

Here is my Oven Denver Omelet recipe that I made for our churches Easter breakfast last weekend. My family said they really liked it... They might have just been making me feel good... But I liked it too! I doubled the recipe and it fit quite nicely into a Pampered Chef stoneware lasagna pan. But you can do what you need to...

Yield: 6 servings

8 eggs
1/2 cup half and half cream (I used milk - didn't have any 1/2 & 1/2...)
1 cup shredded cheddar cheese
1 cup finely chopped fully cooked ham
1/4 cup finely chopped green pepper
1/4 cup finely chopped onion

In a bowl, whisk eggs and cream. Stir in the cheese, ham, green pepper and onion. Pour into a greased 9 inch square baking dish. Bake at 400 degrees for 25 minutes or until a knife inserted near the center comes out clean.

I got this recipe from Taste of Home Breakfast cookbook given to us by one of my besties. Because you KNOW... Breakfast is the most important meal of the day!
