Cruciferous Vegetable Night at McVal's

We made cauliflower fried rice last night.
Maddy made it for us last week and it was delicious so we thought we'd try it as well. I did add cooked chicken to it for variation and I need the protein.


I made a separate version in the back pan for my mother-in-law, who can't eat onions or garlic.  She shouldn't have cauliflower either, so where was MY head?  Oh well, she liked it.

If you ever watch The Big Bang Theory, they had an episode where they had cruciferous vegetable night. Where all you eat are vegetables that can make you gassy. They didn't realize the consequences apparently. 



We might make this a weekly thing, so maybe we will have our own cruciferous vegetable night. As long as it's just one cruciferous vegetable and we don't go overboard!

I might pull out my food processor and do a BUNCH of riced cauliflower ahead of time and keep it in the freezer... hmmm...

My coworkers and I have talked about this recipe at work. Haven't tried it yet, but you make it sound good.

Yum, I'll try it. Cauliflower is so versatile. I like to make mashed cauliflower then add mashed potatoes to it. It's a nice blend and something a little different from plain mashed potatoes.
