Food for Thought

 I got so caught up in the unflattering pic that Meri took of me yesterday that I forgot entirely that I'd take a couple pics too!  But they're flattering.  Shoot.


Here is one of Aggie and Jen a week ago.  It's amazing what you find on your phone when you're bored!
Aggie is enjoying a book from Christmas.  For the record, she thinks it tastes good too.


I made some sourdough dough last night and let it sit in the bread machine all night. It's ok, it's supposed to be sour...  And made English muffins this morning.  Jen enjoyed one for breakfast as did I.  The only things wrong with them, in my opinion, is that they're too thick and I didn't have corn meal to sprinkle on them.  I'll pick some up and try it again.


And I made sourdough crackers and more dehydrated sourdough with the discard from this morning.  I'm probably STILL doing it wrong, but I am a rebel. That's what I do.


Has anyone else felt bloaty after introducing sourdough to their system, generously?  I've been like this for a couple days now. and yeah, I've eaten my share of the various types lately.

hmmm.  Something to think about while I enjoy my crackers.

Baking into Oblivion - Someone STOP me!

:) For those who said they like the Aggie pics. WHEW! Cause that's all I got! 
 Well, that and sourdough.

Meri's daycare, that she's the chef at, had a family potluck night on Tuesday.  Aggie and I joined her and (bf) Ryan for the feast.  Yummy food! 


 And good company too, to a point. LOOK at the pic Meri took of me! hmm.  Just plotting out my payback.  Just watch yourself Meri!


Maddy had car troubles on the way, so she turned around and went back home.

AND then Sourdough...  It's all the rage these days! I've got actual pounds of the natural yeast, coming out of my ears!  Not literally.

The discard sits in the fridge, waiting for me to make crackers or something else. In my spare time, I browse sourdough discard recipes. :) 


Today, I realized that my discard jar was pretty full so I spread some out on carefully cut parchment that fits my dehydrator.  It's on the lowest setting for 3 hours or until it breaks apart.  Then voila!  Shelf stable sourdough starter!  Someday, when I rehydrate it, I'll let you know how it goes.
I found out later, it should have been freshly fed starter.  sigh. I'll try it anyway.


I've got two active ones on the counter.  The one with the band is mine and named Seymour.  The other is going to a friend tomorrow and she can name it whatever she wants.  


I pull out 100 grams of starter each morning and put in a clean jar.  The rest goes into the discard jar in the fridge.  

Then I feed the 100 grams of starter with 100 grams of flour and 100 grams of purified water (any kind really as long as it's not tap - if it is tap, let it sit for 24 hours to release the chlorine).  Give the mix a good stir and by mid afternoon, it's grown double and bubbly and ready to start something.  OR it can sit until tomorrow morning and I'll do it again.

The jars are a BOOGER to clean with the dried on starter. The dishwasher can't do it, it's like cement.  So I soak them in hot, soapy water and tackle it with a SOS pad and get it all off before putting it in the dishwasher.

I've been using my bread machine for the kneading!  I'm not baking it there though.  I use the kneading cycles for 25 minutes, twice.  Then pop it out into a pan to bulk ferment until the next morning on the counter, covered with a towel.  Then pop it into a banneton basket in the fridge until the next morning and bake it. The basket is what makes the rings. I waited two days in the fridge the last time and someone pushed a can of something on top, deflating it.  so here it is after I baked it this morning.  Not terrible but not as poofy as it could be.

I need to practice with the cute little cuts and slice.  I have a couple lames but they're basically just razor blades on a stick. *lame*


So mistake #1 for me, don't have it stuck in the fridge for 2 days.  And mistake #2, Put it in a some kind of container with a loose lid when in the fridge.  In case someone shoves things in the fridge. :\  
Oh and I forgot to spritz the top with my water spray bottle!  That helps with a crispy top.
Oh well, live and learn and in the meanwhile, eat your mistakes.

Mistakes taste pretty dang good with peanut butter.

 I have made several loaves so far (ok 5) and with each one, I realize what I could have done different.  and then forget what that was the next time I make it.  I'm planning on starting some sourdough English muffins tonight to cook tomorrow morning.  Jen gave me the idea.  AND she gave me the starter kit.
It's all HER fault!

My favorite way that I've found to bake the loaves without burning them is to use Robb's cast iron dutch oven and a cold oven to start.  


There are so many conflicting instructions online, it's hard to find anyone consistent!  But if I follow the conventional method, preheat the oven and pans to 450 degrees, then bake for 20 minutes with the lid on and 20 with the lid off, it's a hit or miss.  Mostly miss, because every time I try that variation, it's either burned on the outside and/or somewhat doughy on the inside.

SO, here is my secret that someone mentioned on my rebel sourdough fb group.  I've tried it a couple times with success.  I've got a pizza stone on the bottom rack of the oven. It helps keep the heat from pulverizing the bottom of the loaf.  And make it a clean stone!  I'll tell you about that another day but suffice it to say, it'll smoke you out.
  
I put parchment or a silicon flap thing under my bread dough into the lid of my dutch oven, then use the big part as the lid.  I stick it into a cold oven and turn the oven on to 425 degrees.  Leave it for 50-60 minutes, then uncover it.  Careful!  Don't burn yourself!  Then if it's not dark enough on the outside, continue baking it uncovered for another 7-10 minutes.

Stick a thermometer into it and it should register at least 200 degrees. DONE!
Let it cool for at least an hour before slicing it up.

I bought a covered loaf pan that I'm going to try someday.  Not sure how to use that yet.

Because you know me!  I can ALWAYS add a hobby to my repertoire!

Tis the season

Sunday night, Leon and I made gingerbread dough and only got two rolled out and baked.  We decorated them last night.  


Turned out pretty cute!  I ate all of mine but Leon put a bunch more frosting on his after this picture and got sugared out, if that's even possible...  His sat til morning and he said I could eat it.  I ate the head.

Then also this morning as I came out of our bedroom, I beheld this sight.  We leave our tree on all season and it's so nice to wake up to...  


Lots to do today for work and home and everything and everyone.  Trying not to feel stressed.

Ola Dinosaurus!

 Rawr!

Photo edited beyond recognition so you wouldn't see the state of our computer desk chair...

I came in from work on Wednesday to find that Jurassic Park had taken over the computer chair and the desk...  Well, I was GOING to work here for a while...


And that's what Leon had created.  Jurassic Park.  


All the dinosaurs (and giraffes) were caged, but I'm not sure he kept a firm count due to more dinosaurs creeping in when he wasn't looking.

Pterodactyls belong in barns.

Pretty much the plot of the movie...

That afternoon, Meri brought home a homework partner to do a video on how to make Spanish Lemon cake, spoken all in Spanish. 


It was interesting to listen from the living room, until Leon decided to run in and try speaking Spanish too, which was complete gibberish and kept screwing up their shots, so Robb and I took him to Burger King's play land.


After baking, they put the leftovers onto a plate and I've been eating them slowly (yeah right!) throughout the last couple days. 

Well, the birthday girl gets home tonight!  YAY!  and we're having pizza on china!!  YAY!!!  
I need to get her gifts wrapped...

Then tons of people descend upon our house late tonight and tomorrow for the BIG 50/50 birthday party tomorrow night.  It's the somewhat perfect split between Robb's 50th birthday and his sister's 50th birthday.  Plus a 4 day delay on his brother's birthday and then of course a 2 day delay on Maddys.  I'm going to need to borrow some folding chairs...

Cornucopia of fails

 So I made two loads of bread dough last night in the machines and didn't have time to cook them into the bread cornucopias so I shoved both together in the same container and stuck it in the fridge to harden it up a little until today.  

Before we went to bed, Robb noticed that it was becoming a balloon...  


So I found a gallon sized sealed bag, sprayed the inside with Pam and then dumped it all in.  Then stuck it back in the fridge.  

I was awakened this morning with Robb calling upstairs to tell me that my dough had blown up in the fridge.  Dang...  I came down stairs fearing the worst.  That there would be dough bits on everything. Kind of like when a can of pop freezes in your car in the coldest part of winter and explodes onto the seats.  I know exactly how that works...  I've seen it.


But bread dough acted differently.  It basically just popped open the bag as if it were a can of biscuits.  I cut pieces  of dough from the bag and started making one of the cornucopias.  


What a mess.  Nothing worked right this time.  And since we had JUST run out of eggs, there is no glossy sheen on it.  Before I baked it, I sprayed the heck out of it with Pam spray again.  


So it's kind of a cornucopia bread tunnel instead.  Oh well.  I'm still going to use it!

And yeah, I realize it looks pretty sad.  I'm not going to sit at that table tomorrow...

Pass me the butter

Maddy and I weaved the bread dough over some foil on Sunday afternoon.  It was awkward...  

And slippery...

One turned out better than the other.  And sorry they're in plastic already!  AND in the freezer at the moment.  


Can't have moldy cornucopia's as a centerpiece, now can we?

So anyway, I've got our fall table runners soaking and out of these cornucopias, will be pouring out thread, yard, lace or whatever else sewing supplies I might find.  I still need to make at least 2 more.  

That will be Thursday I think.

I hope these look good for the tables!
They're for my sewing group's special meeting this weekend.  
I'm in charge of decorating 3 tables.
Hopefully NOT a Pinterest fail.

Cornucopia of Randomness

Happy Birthday to my big sister that I'm closest to in age and sense of humor.  
MUCH to my husband's chagrin. :)  


Today Ruth Ann is XX.  She's in red and I'm the baby, but not for long.  There are 2+ children after me a few years later.

Maddy got home last night for a fall break from college!!!!  YAY!  I've got so much planned and she brought so much homework with her.  She can work on that while I'm working today and tomorrow and I'll fill up her time when I'm off work!  Unless she needs a break. 

The bride came by for a refitting on the dress Tuesday night and she's pleased with the changes. YAY again!  The rose did need another 24 hours soaking in Oxy Clean equivalent and we threw in her aunts veil too that she's going to use.  It had been several years and looked dirty next to the dress.  By late yesterday it looked pretty good!  I rinsed both items and put them out to dry.  Several tiny gems fell off the veil into the bathtub. WHOOPS!  

I saved them and then after ironing the veil this morning, glued them back on.  It's resting on my bed.  Hopefully the glue will be dry when her mom comes to pick it up this afternoon...

Our sewing guild has their special event not this weekend, but next.  I'm in charge of decorating 3 of the tables.  I'm thinking this...


I envision bunches of spools of thread and lace billowing out of them...  What  do you think?

I'll try it out on Sunday I think...

Thursday evening rush

Meri and I did some candy and cookie prep work last night. I made two big batches of sugar cookie dough, rolled them in big long logs and stuck them in the fridge to get cut and baked this weekend. Then Meri and I dipped pretzels in chocolate & vanilla almond bark for some tasty snacks and boy are they! I'm going to gain a few pounds before Christmas...
In the meanwhile, Maddy volunteered to do our Christmas picture of the kids for me. I had done a mockup of one yesterday, but it was vetoed. Apparently I didn't use the right photos of her... So she took over. okie doke...
It turned out pretty good, don't you think? I have been trying to get the kids together for a Christmas picture the last couple months... Well, at least I've thought of it AFTER Ryan has gone home and then I kicked myself... So we're doing a collage this year. Just have to get them printed off now... Will probably send them to Walgreens.
You can click on these recipes to enlarge them and print if you want them. The above recipe is from Taste of Home's Best Loved Cookies & Bars magazine 2008 issue. That's the one that I have chilling in the fridge as I type. Judging just from the taste of the dough, it's incredible!!! I didn't have half and half, so I used some slightly watered down heavy whipping cream. AWESOME! This might very well be my new favorite!

Below is our old favorite that the kids made sure I had the ingredients for this year. I made them before Thanksgiving and they're all gone now. SonyaAnn - these are the cookies that you received. See? I do remember what people ask me... just kind of late sometimes! This recipe calls for Vanilla bean and is so good! The Vanilla Bean Sugar cookie recipe is from Dec 2008 Everyday with Rachael Ray magazine. TONS of great recipes in that one!I'll post Robb's annual Christmas letter on Christmas Eve. He's got a rare wit, that one!

Our Christmas plans have been shuffled around a bit on one side of the family and I think we're hosting again this year, but not sure when yet. Meri is getting her Christmas parts memorized for this weekends program at church. Maddy is glad she was confirmed last spring, so she's off the hook this year! Since Meri is in the older kids category, she's got a lot more to memorize. She's doing a great job! I need to make some super big cheat sheets with the hymn words on them for them before Sunday so the kids won't have to memorize everything!

Tomorrow morning, the girls and I will finish up our Christmas shopping and hopefully meet Robb for a quick lunch at the HuHot. I LOVE that place!

YUMMO!! Cookie making time!

On Saturday afternoon, the girls and I met up with our friend Polly at our friend Ada's house. Ada loves to have cookies or muffins in the freezer during the Thanksgiving and Christmas season, so I believe we've just started a new tradition. Do this 2 more years in a row and it will be, right?Ada has M.S. and Schleroderma, so since she can't make the goodies herself. Polly and I brought our supplies and dug in. Each of us took ownership of a recipe and went to work. I brought my $5 mixer that I found at a garage sale and cannot be parted from for anything! It's awesome!
Ada turned on the radio to some Christmas tunes and we danced while we worked. We made 6 different kinds of cookies and yummies.
Spimoni slices that a college friend gave me the recipe to on Facebook. Notice the empty spot? We had to taste test. They're basically a sugar cookie recipe, split into 3rds. In one of the thirds, you mix in a couple ounces of semi sweet chocolate squares. In another, green food coloring and chopped pecans. In the last (I didn't have red food coloring or candied cherries) I used 1/4 cup chopped maraschino cherries and they made that second pink! Then you layer it, chill it and then slice and bake. Easy peasy! Graham crackers with peanut butter, then dipped in chocolate candy coating.
Chocolate cookies with marshmallow, frosting and pecans on top. I wasn't sure how they would turn out... Polly and I decided we'd change a couple things next time we make them as they aren't the prettiest cookies we made, but they did turn out very yummy!
Meri had made a recipe that she found in the back of her Sunday school booklet called.. Don't quote me... Humeteuch ?? That's not right... They are Jewish cookies that have wheat flour in them. You cut them in circles and fold up 3 of the edges. Put apricot preserves in the middle and bake. I was a bit apprehensive with those too, but they were pretty tasty too! Who knew that wheat flour could make good cookies?! We made up a new batch last night to try them out a slightly different way. They're freezing now.
I made Peanut butter puddles. Basically a peanut butter cookie dough, baked in mini muffin tins, lined. Then when they're done baking, you poke out the middle a little and drop in this fudgy mixture and put chopped nuts on top. I did some with nuts and some without. People are funny that way with their tastes... Oh and they were awesome.
Maddy took over the recipe where you take mini snicker bars (the fun size - although I've wondered why they're called fun when they're so stinking small...) and wrap them up with sugar cookie dough (which I made the night before and chilled). Then you roll them in Christmassy sugars (green & red) and bake. They turned out huge, so next time we make them, I think we should chop the fun sized bars even smaller. So festive looking!Then when everything was done cooling, we wrapped up assortments on individual little Christmassy plates, stuck them in freezer bags and froze them. She'll have enough to give out to the mailman, UPS guy, relatives & friends who stop in, etc. We also made up a big tupperware container of an assortment of the rest and froze that too. She'll have a big variety to share at our church ladies guild Christmas party in a couple weeks. We always have it at her house. Looking forward to that!

Now I'm definitely in the Christmas mood... I think we're going to try and make a couple batches a week to fill up the freezer so we can be well stocked at home too.
